    Peanuts are considered a good source of healthy fat, specially mono and polyunsaturated fats. They are also higher in protein compared with other oilseeds. Blanching the peanut improves its colour by transforming it to solid white, while also destroying its anti-nutritional factors making them easier to digest. Blanched peanuts are used as a snack or as the base for peanut butter and sauces. They are used mostly for cooking and baking.
