Walnut meal is a very fine flour-like product. It imparts a strong walnut flavour and is an ideal replacement to strong gluten flours for people who suffer with health problems such as coeliac disease. Walnut Fines can also be incorporated into home baking at the dough stage to give a walnut flavour to many items without making any changes to the texture.
